I think she might be talking about the lowered ears, which could mean sadness. But it could also mean fear, anger, boredom, sleepiness, or simply that the horse is listening behind him/herself. I would be sad too if all my movements were controlled, and made to walk on such an unnatural surface that is hard on the feet. And all the crap around my face and in my mouth, and all the noise.
